The Moscow Farmers Market returns in May, bringing local musicians, fresh produce, local artisans, and delicious food downtown every Saturday. It’s the perfect spot to support all our local vendors, say hi to a few friends and enjoy the vibrant, community atmosphere all season long!

spring veggie stir-fry

Ingredients:

  • 1 tablespoon olive oil
  • 1 cup snap peas, trimmed
  • 1 cup asparagus, cut into 2-inch pieces
  • 1 medium carrot, julienned
  • 1 red bell pepper, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce (or tamari for gluten-free)1 tablespoon honey or maple syrup
    Optional: sesame seeds or fresh herbs for garnish

Instructions:

  1. Heat olive oil in a large skillet or wok over 1. medium-high heat.
  2. Add garlic and cook for 30 seconds until fragrant.
  3. Add snap peas, asparagus, carrot, and bell pepper. Stir-fry for 5-7 minutes until vegetables are tender-crisp.
  4. In a small bowl, mix soy sauce and honey/maple syrup. Pour over the veggies and stir to coat.
  5. Cook for an additional 1-2 minutes, allowing the sauce to thicken slightly.
  6. Remove from heat and garnish with sesame seeds or fresh herbs. Serve with rice or noodles.
